Strawberry Daiquiri

Ingredients:
20ml/¾fl oz fresh lime juice
2 tsp caster sugar
35ml/1¼fl oz dark rum
15ml/½fl oz strawberry liqueur
4 large strawberries, plus one extra strawberry, to garnish
1 scoop crushed ice

Directions:
1. Blend the lime juice, sugar, rum, strawberry liqueur, strawberries and crushed ice in a food processor until smooth.
2. To serve, pour the mixture into a large wine glass. Hook the remaining strawberry over the side of the glass.

Strawberry Blonde
Ingredients:
450g/16oz strawberries
175g/6¼oz caster sugar
150ml/5¼fl oz water
150ml/5¼fl oz rosé champagne or sparkling wine
To serve
a scoop of strawberry ice cream per serving

Directions:
1. Combine the strawberries with the caster sugar and water in a liquidiser.
2. Pass through a fine sieve.
3. Pour the champagne or sparkling wine into a glass, and combine with four tablespoons of the strawberry purée.
4. Float a scoop of strawberry ice cream on the top, and serve.

Strawberry Fizz

Ingredients:
4 strawberries
icing sugar, to taste
1 glass sparkling wine (champagne, cava or prosecco)

Directions:
1. Crush some strawberries and rub them through a sieve. Sweeten with a little icing sugar, mixing thoroughly to dissolve. Fill one champagne glass a third full with the strawberry juice and top up with ice cold sparkling wine.
2. Drink quickly and pour yourself another one.

Maestro
Ingredients
40ml/1½fl oz vodka
20ml/¾fl oz strawberry liqueur
½ tsp maple syrup
½ tsp 8-year-old balsamic vinegar, plus extra to serve
20ml/¾fl oz orange juice
dash lemon juice
½ strawberry, to garnish

Directions:
1. Place all the ingredients except the fresh strawberry half into a cocktail shaker filled with ice. Shake hard, then strain into a cocktail glass.
2. Garnish with half a strawberry and a drop of balsamic vinegar.

The Pink Pick-me-up

Ingredients:
25ml/1¾fl oz freshly squeezed pink grapefruit juice
25ml/1¾fl oz freshly squeezed cherry juice, sieved
25ml/1¾fl oz cranberry juice
25ml/1¾fl oz strawberry purée
handful ice cubes
½ strawberry, to garnish

Directions:
1. Place all of the ingredients, except the strawberry, into a cocktail shaker and shake well.
2. Strain the liquid into a Martini glass and garnish with half a strawberry.

Sparkles
Ingredients:
2 small strawberries, halved
water
1 tbsp strawberry liqueur, plus a few drops extra
champagne, to top up

Directions:
1. Place half a small strawberry into each of four sections of an ice cube tray and fill up the tray with water to about 80 per cent full.
2. Top up the cube sections with a small drop of strawberry liqueur (not too much as the alcohol won’t freeze). Place into the freezer for 2-3 hours or until completely frozen.
3. Place the remaining one tablespoon of strawberry liqueur into a Martini glass and swirl around the glass.
4. To serve, place the strawberry ice cubes into the glass and top up with champagne.

Strawberry and Baileys Fool

Ingredients:
1 pint strawberries, washed and hulled, with 6 reserved
2 cups heavy cream
1/2 cup Baileys Irish Cream
confectioners’ sugar, for dusting

Directions:
Undoubtedly, one of the prettiest fruit fools is made with strawberries, and this version adds Baileys Irish Cream for a little zip! The alternating layers of deep colored puréed fruit and the lighter whipped strawberry/cream are a picture-perfect ending to a spring meal.

1. Chill 6 stem glasses while preparing the fruit.
2. In a food processor or blender, purée the strawberries until smooth.
3. In a small bowl, with an electric mixer on high speed, whip the cream until stiff.
3. Add half the strawberry purée and the Baileys to the cream and blend until smooth.
4. Remove glasses from refrigerator and divide the strawberry/cream mix into the bottom quarter of each.
5. Spoon over the fruit purée, and continue to alternate layers of cream with fruit.
6. Slice the reserved strawberries over the top of each glass and sprinkle with confectioners’ sugar.

Strawberry Smoothie
Ingredients:
250g Strawberries
250mls Greek style yoghurt
1-2 teasp. Honey
125ml crushed ice

Directions:
1. Wash and hull the strawberries, then blend in a food processor with the yoghurt and honey.
2. Divide the crushed ice between two glasses and pour in the smoothie mixture.
3. Decorate with a sliced strawberry and put a straw in each glass.
